Garden Goulash


1 tsp olive oil
1 medium onion, diced
1 small green bell pepper, diced
9 ounces Gardein Beefless Tips (or chopped veggie burger)
1 clove garlic, finely chopped
1 tsp paprika
1 (15 ounce) can stewed tomatoes
1/2 cup red wine
1/2 tsp dried oregano
1/2 tsp dried sweet basil
1 tbsp tomato puree
1 tsp sugar
Black pepper to taste

  1. Heat olive oil in a large skillet over medium heat, and saute the onion 5 minutes, until tender. Mix in the green pepper and Gardein, and saute another 5 minutes, until the pepper is tender. Mix in the garlic and paprika and stir for one minute.
  2. Mix in the tomatoes, wine, oregano, basil and tomato puree. Bring the mixture to a boil, stirring occasionally. Reduce heat to low and simmer 25 minutes, until thickened. Just before serving, stir in the sugar, and season with pepper.
  3. Serve over brown rice, whole grain pasta or quinoa.
