Vegan Blue Cheese Dressing
½ package of firm or extra firm tofu
1 clove minced garlic + ¼ tsp garlic powder
1 cup vegan mayonnaise
1½ tsp tahini
3 tsp lemon juice
3 tsp apple cider vinegar
¼ tsp iodized table salt
Mix all ingredients except half the tofu in a medium size bowl. Adjust salt and vinegar to taste as you go. Mix until smooth.
Crumble the remaining half of the tofu into small “lumps” and then add to the dressing mixture. Stir until well blended.
Serve with vegetarian “chicken nuggets,” as a dip for vegetables or on salads.
